Par boil them. Slice into disks, coat in an herbal vinaigrette (something like a chimichurri), then grill til crusty.

Take your leftover baked sweet potatoes (or just cook some if you don't have any leftovers) and cook them down in a cast iron skillet with brown sugar. Candied sweet potatoes is what Momma calls them.

And no, don't call your dentist. They are supposed to stick to your teeth for about 3 hours.

Thomas Keller's potato pave recipe is great. Requires some work though.

It's kind of a hybrid between scalloped potatoes and Fried potatoes. Fried scalloped potatoes? I don't know but it's delicious.

Had a potato similar to that at Le Foret. Excellent.

If you decide not to grill them, Pioneer Woman's crash hot potatoes make a great side.

Okay, so I ended up trying these. Apparently, I over boiled the potatoes. When I went to mash them with the masher, they just fell apart. Instead of having one cookie like piece of potato, I had tons of shards.

So I just made potato salad heavy with smoked paprika, some salt and mayo. Simple, tasty and a little different than the usual. (Quality smoked paprika is the key.)
