Sun dried tomato paste help?

So my mom buys a tube of sun dried tomato paste despite the fact it has too much sodium for her dietary restrictions.
She has passed it on to me.
Besides putting it on a home made pizza, wth can you do with the stuff? Give me some ideas.....

Maybe use it as an accompaniment to hummus?

I've added it to the meat mixture when I'm making stuffed peppers and I've also added it to chili and spaghetti sauce.

Mix with a little mayo and use sparingly on a sandwich.
