Butternut squash ideas?

I have cubed and cooked a butternut squash. I would like to make this into a good side dish. I'm thinking of adding a little sugar, cinnamon, nutmeg, butter and walnuts and baking.

Or

Add salt, pepper, Parmesan, garlic and baking.

Give me some ideas, FDB.

I use it just like a sweet potato but like has been mentioned method of prep depends on what it is going to be paired with.

Hamburger patties grilled.


Edit: this meal is strictly for function not for decadent enjoyment. I would obviously sub the sugar in above recipe for truvia if I went that route.

I want to get a recipe and sun out ingredients that follow my nutritional guidelines?

Don't add sugar--it's already a tad sweet. Pair it with something to bring out the natural sweetness, like caramelized onions. After roasting, it's easy to turn it into a pureed soup. So make extra and have a different dish the next day.

My husband has been adding a little bit of cumin and a sweet curry powder, in addition to cinnamon. I'm not sure if he adds sugar or honey, but something definitely sweet.

You could so a hash. Dice it up and add some diced apples .. sautee with shallots and garlic in bacon grease. Season w/ salt, pepper, dried basil and clove.

Thanks guys.

I baked it with cinnamon, nutmeg, trivia, walnuts and honey.

It was good but next time I will go with savory.

I like to use it for ravioli filling and top with a good homemade bolognese. The slightly sweet filling and the savory bolognese pair well together. Recipes typically call for a brown butter/sage sauce, but I prefer the bolognese (had it that way in Italy).
