Legit White Bean Recipe needed.....

doing a big jambalaya on saturday, no recipe needed there.....BUT i do need a good pot of white beans to complement
I was thinking basic recipe is this
Hambone/pork neck/turkey neck/whatever is your choice down in a pot of water
Trinity
Bay leaves
Assorted Cajun Seasonings
Boil all above ingredients til meat falls completely off of bone
Then place white beans in and cook down slowly til desired creamyness
Am I missing something....Also please post links to recipes or post yours

I like to add some minced jap peppers, and a mix of dried or fresh thyme, oregano and basil. Use parsley nd green onion to finish. Consider a fine dice of red bell pepper during the simmer for nice color. Use some garlic, too.

I did one extremely similar to yours a couple of weeks ago and it was a huge hit. Kept it simple.

I'm a big fan of pickled pork. Would throw some of that in there....

Here's what I did yesterday.
Leftover ham bone with some ham attached
1 lb. Camellia white beans
1 diced onion (I was in a hurry, it was more of a chop than a dice)
1 diced yellow bell pepper (cuz that's what I had)
4 cloves of garlic, diced
Couple of good sprinkles of Herbs de Provence
Tony's, cuz that's what I like
9 cups of water (will cut it to 8 next time)
Put it all in the crock pot. Set it for 10 hours and go to work. Come home to a house that smells awesome. Check pot. If it looks like too much liquid, remove some liquid and put it in a pot on the stove and cook it down. Return the reduced former liquid to pot.

Looks good. I like my beans a bit more creamy so I smash a good bit of them to create the creaminess that I like.

One thing my parents did with red or white beans is begin boiling with nothing in the beans for about 15 minutes then drain water and start over with fresh water seasoning and ham bones.
Theory was first boiling was to get the dirt off of the beans.
