Looking for a charcoal/wood burning smoker. The locker style with the door is intriguing looking to me but reviews on the lowes Home Depot academy ones are shitty.

Is a decent smoker possible in this $ range?

One thing ill say about the academy smokers/cheaper smokers, is that they don't hold a low temp that well. I have he'll keeping my smoker at 225

FYI

Orion Cooker

Orion cooker. Hands down the best smoker I have ever owned. Solid stainless steel and cooks incredibly juicy and fast. Won't break the bank either.

Agreed.

For $3-$500 you could get the Akorn kamado. I've heard good reviews on it.

Get some sort of Big Green Egg knock off. Or buy a used BGE? I have all types these are the best by far. No foiling meat ever. I can do a big packer trim brisket to perfection and 190 degrees in 9 hours and never add charcoal. I add wood every so often but not charcoal.

Big Tex, what temp. are you cooking your brisket at? I've got an egg too and usually cook mine at 225*, but briskets usually take 10.5-11 hours (I usually pull around 200*) using the Texas Crutch Method. The ones I cooked where I didn't wrap took 16 hours or so.

Look around for an Egg Fest (Big Green Egg Cook Off kinda deal) in your area. You can usually get a demo egg that was cooked on one time for 5-600.

I can vouche for the orion cooker. That thing is ridiculous. The only drawback of it is it doesn't have a place to get that final char on the meat. No grill over the coals. So when your ribs come out, if you want to get a little more color on them, you need to either throw them in the broiler or light another pit (which is what I do).

I also have this one: New Braunfels Offset Smoker. It was 700.00 at Academy 3 or 4 years ago but they don't carry it anymore. Heavy duty iron...not the flimsy thin type they sell now. I definitely recommend it as well if you want a good stick burner.

I cook them 225-250 degrees only takes maybe 10 at the outside I take them off at 190 and let them sit covered for a half hour or so. Slice it off the brisket when serving, do not cut a brisket and let it sit on a platter. You can but it is much better just cut.
