A long time ago, there was serious consideration to making a fourth part (some of sort of prequel) with the focus on Ben Affleck as Sonny the hothead.
Thankfully it didn't come to fruition.

If they were to make a 4th installment of the Godfather, it would definitely have to be a prequel. Being that Michael Corleone died at the end of the 3rd movie, that pretty much signaled the end as he was the central character through the 3 movies.
The second movie explored Vito Corleone's youth and featured flashbacks that showed his path from a young orphan immigrant from Sicily to powerful mob boss. So as far as a prequel about Vito, that base has already been covered.
I'm not really sure what they could do with a 4th movie, the story seems to be done and has reached the lengths that it would go. For a movie series as legendary and influential as the Godfather, I would just let it be at 3 movies unless a group of people came together with a revolutionary idea that would make it awesome.
But to answer your question, if there was a 4th Godfather movie, who would I cast? Well, for certain, I would have to include a couple of mob movie/tv show vets like Tony Sirico and Frank Vincent, those two guys are synonymous with mob movies. If you were to choose a modern big star for the lead role, I think someone earlier mentioned Bradley Cooper, I think he would do a great job in a Mafia role.
