Jambalaya 'mini quiches' without the eggs.

Dammit thought I had made this up myself.
Make a good homemade jambalaya. Line mini muffin pan with croissant dough, but instead of filling it with crappy quiche stuff, pull out a sausage, a piece of each of the holy trinity, a little chicken, whatever else you threw in there, then stuff it down with the rice.
Then top it with cheese.
Cook it like you would a mini quiche.
Thank me later.
I randomly did this today while my daughter was making mini quiches and it blew everything else in the pan away. I'll be doing this a lot from now on. Make sure you have a good piece of tomato in there. The contrast works great.

Well dammit. Should have googled first. Although the recipes I'm seeing for this do not look nearly as tasty as what I did.

Thanks Gris. I had instant notions of this being a perfect 'boat food' and I'm definitely going to do that with it. Problem is, my jambalaya gets eaten too fast and I have to hide the leftovers.

I used to eat Jambalaya Wraps
Get a big burrito sized tortilla and just stuff if it with leftover Jambalaya. Makes for a great cajun burrito
