Thinking just a standard fillet and bake it in the oven? 425 degrees? Covered?

Cut into chunks. Put on trotline. Clean and eat fish and turtles you catch with it.

Some states have rewards for them. I think New Yorks is actually quite substantial. You should certainly check with wildlife officials.
