Something similar to this.
Smoke/roasted a sirloin tip roast over some apple/mesquite wood dry rubbed with fajita seasoning. Pulled at 135 and grilled some red and green peppers along with a sweet onion.
Served with Spanish rice and some homebrew. Dominated.

I did this last night on my egg, except I used hickory. I sliced mine real thin and had some awesome sammiches today.
