The most frequent outlet for mislabeling was sushi restaurants. Out of 118 sushi venues visited, 95% sold fish that varied from their menu identification

I knew that Tai (red snapper) is regularly substituted, so this comes as no surprise. I didn't see any mention of Krab in the article. I'm not sure why that really gets my goat when it says Crab on the menu and you get the fake stuff. It really irks me when they go out of their way to label it as SNOW Crab, which it is not.

Oh, man, I feel the same way about "snowcrab". Just call it crabstick, for pete's sake. I've been burned too many times and now I just avoid crab in general at Japanese joints.

The other day I listened to a This American Life episode where they talked about pig rectum being substituted for calamari.

I pretty much assume that anything labeled "crab" at a sushi joint is not actual crab. I like the fake stuff, though, so it's no problem for me.

I would, but it seems as if CNN pulled the link after mere hours. I wonder if they had some facts wrong or if the Asian mafia threatened to break the author's kneecaps.

In a nutshell, it cited some very large numbers of various fish being substituted, mostly snapper and escolar for tuna. The number was incredibly higher than you would think, which made me question whether the Krab thing was taken into account. Just like the other poster said, when a menu says snow crab at an Asian restaurant, it's usually not.

I did a google search for the story (exact title as I posted), but there's nothing out there now. Curious.

The episode concluded that they had no evidence of it happening other than a guy who worked at a meat plant saying it happened, but a taste test did reveal that they tasted similar and were the same texture and shape, and one of the three guys preferred the pig rectum.

Thanks for that. It is an interesting read and I would wonder if the numbers would be even more extreme if they took into consideration smaller markets like Baton Rouge vs. Seattle.

Upon skimming over that lengthy article, I still saw no mention of Krab, so it's pretty impressive that they're talking fish only.
