Does This Hummus Recipe Seem Legit?


don't have much experience with making homemade hummus...anything i should add/subtract?

Cook Chick Peas in crock pot on high, until hot, then on low, (maintaining about
a half inch to an inch of water over them), for about 12 hours, & strain in
colander.

-- 1 1/2 Cups Chick Peas
-- A little over 3 T Extra Virgin Olive Oil
-- 1 T Lemon Juice
-- 2 T Minced Garlic in jar or 1 T fresh garlic
-- 1/4 tsp Salt
-- 1/2 tsp Cayenne
-- 1/2 tsp Cumin
--1 T Tahini (optional)

Legit. I have no idea what Tahini is, however.







ETA Still don´t know exactly what Tahini is, but I´m sure it´s been in most versions of hummus which I´ve eaten.

Increase the tahini 3x. I don't care for cumin in mine. Add a T or two of Italian parsley. Process it and adjust to your taste.

Tahini is a sesame seed paste. It is not "optional" in hummus...it is a main ingredient.

Tahini is more than optional, it's necessary for hummus. Although I once read you could substitute peanut butter or almond butter for tahini (it's sesame seed butter)

Sesame seed paste with nothing added?



Googled. Yeah, this is most certainly the secret ingredient, as hummus doesn´t taste like lemony garbanzos.

Tahini is sesame paste. It has that distinct (nice) sesame taste.

That's what tahini is...sesame seed paste...when you add stuff, you get....hummus.

The recipe needs garlic, too. I'd add 2 or 3 pods.

Without tahini it's just bean dip. I make several variations, with basil leaves, roasted red peppers, or instead of garbanzo bean I used black eyed peas. It was pretty good, but not really hummus.

And, when you put the chick peas in the processor, add the liquid, too. Makes a better texture.

You don't cook it...just process the ingredients until smooth in the food processor.
