How long will frozen oysters keep?

Well I know many people who freeze them and use them in gumbo or oyster stew. Might not be the greatest but it's done and done frequently.

My grandfather drove to Shell Beach every year from his central Louisiana farm and loaded up around mid November and they used them for oyster dressing and gumbo throughout the holidays. I have great friends in BR and Houma who do the same and I as well have a quart frozen now.

It ain't all bad.

2 quarts in the freezer now. Buddy gave them to me not knowing they could be frozen. They'll make a damn good oyster stew.

as long as no part of an oyster is sticking out of the liquid, I would say a hell of a long time...multiple years....

Don't know how long they'll keep but I've had them in a soup and they were okay not optimal but certainly not bad.

I have seen them up to a year in water. Fried they were just fine. Dunno after that.

You can freeze oysters up to a year or longer.
The quality does go down significantly though. I wouldnt eat them raw but like others mentioned in a soup, gumbo, stew, jambalaya, spaghetti, or dressing they'll be okay. They not going to plump too much if you fry them.

About two years. Why use frozen over fresh is a better question to ask?
