Well I know many people who freeze them and use them in gumbo or oyster stew. Might not be the greatest but it's done and done frequently.
My grandfather drove to Shell Beach every year from his central Louisiana farm and loaded up around mid November and they used them for oyster dressing and gumbo throughout the holidays. I have great friends in BR and Houma who do the same and I as well have a quart frozen now.

You can freeze oysters up to a year or longer. The quality does go down significantly though. I wouldnt eat them raw but like others mentioned in a soup, gumbo, stew, jambalaya, spaghetti, or dressing they'll be okay. They not going to plump too much if you fry them.
