Why not just buy a sack of masa from WallyWorld?

I have a three pound sack that I've used for three years. Keep it sealed in a screw top canister.

I love it in chili. Makes nice gravy and there is a flavor I can't get without it.

Thank you, my dear! Yes, I use Penzey's a lot and I LOVE this chili powder. I used the 3 tablespoons in this. It contains no salt, so you salt separately. I like that.

You're definitely not alone. I always have onions, bell pepper, green onions and garlic around. Usually have celery but not always. When I'm cooking something that uses all of them and the amount doesn't much matter, I use Guidry's. If I want a heavier bell pepper taste or garlic taste, I just supplement but it still saves me a bunch of chopping. I use about 4 or 5 of them for gumbo and that saves me a lot of chopping since I have to chop other things. I love to chop, but sometimes my wrist doesn't care too much for it.

I like that also. I prefer to control the salt as much as possible.

Now, I want chili. A lady just delivered 10 dozen hot tamales to my house that are still so hot I can't get one out to try one. They're tied up in half dozen bundles. Have you ever made a hot tamale type pie with the tamales? I don't like corn in that sort of thing, but I've been looking for a way to use them in a similar dish. Haven't been happy with what I've come up with so far and can't figure out what I'm looking for!

Because I don't want a 3 lb bag of something I don't use too often hanging around. Sounds silly and I guess I could just throw a lot of away, but there are starving children in China according to Mr. Nap, you know.

Very interesting idea. So you'd have the tamales and no cornbread sort of layer? Too bad you don't like corn, I was thinking a corn souffle might be good, but even so, you'd need a textural contrast somewhere, the way a crispy cornbread kind of topping works with a regular tamale pie. Hmm. Will ponder this.

I love corn, but not mixed into things other than corn soup and Mexican cornbread that I can think of. The tamales have cornmeal around them already. Thought about layering them with chile and possible some cheese (I have a great spicy cheese from Sam's), sort of like lasagna. I'm with you on the crunchy cornbread topping. Wondering if that would be too much with the tamales, though these aren't heavily "battered". A Mexican cornbread topping on the thin side might work. I like sour cream with just about all Mexican food.

Never made or had a tamale soup. Might look around for that, as well. Sort of tortilla soup with tamale pieces, perhaps.

Gris, the more I think about it, the more I think you are already on the right track with this.

A layer of chili, layer of your spicy cheese, a layer of tamales, and then a thin layer of Mexican cornbread (which probably has some cheese and some peppers in it?).

Do you like black olives? I'm just trying to think of something else to contrast with the richness of chili, cheese, tamale.

It sounds delicious.
