Mashed Potatoes, add about 2T of truffle oil
or sometimes I'll add some Boursin cheese
as for some color on the plate any kind of vegetable can work. Asparagus is the most traditional. I like to do a salad though. You could do a steak house type thing and go with an iceberg wedge and homemade bleu cheese dressing

roasted asparagus with hollandaise sauce, pomme de terre dauphinois(the original French version of what is poorly made into scalloped potatoes) in the US.

I think I will go with the sauteed mushrooms and the wife wants creamed spinach this time. But I like a lot of the ideas and will look this thread up in future steak cookings. Thanks again.
