Using frozen bell peppers & onions?

I have to do a large quantity of food this weekend and was thinking of using frozen chopped Bellpeppers and onions instead of chopping fresh myself. Bad idea? Anyone ever do this?

I have used the fresh chopped before and they are fine but I prefer to cut my own and it's cheaper. If you need them for this weekend buy them today and chop tonight and put in a ziplock. Then you have that much done and out of the way.

Anytime I have a little chopped fresh peppers/onions left over, I put them in a ziplock bag and freeze to use later. They're ok in a pinch, but nowhere near as much flavor as freshly cut.

Just head over to Capital City Produce on Oneal behind Hobby Lobby. I'm pretty sure you can pay cash and carry out. Every restaurant has an account there, if you have a friend in the biz.

They will produce more moisture as they cook down as the freezing process will break down the cell walls as a result of the expansion of water during the freezing. You must compensate for this event. This will result in a lose of some flavor at the same time.

We use Guidrys or Sam's fresh cut in the produce section sometimes. Then you do not have the water issue of frozen.

I prefer to get my stuff ready during the week.

If ya don't wanna do that, I suggest at least doing it with the onions. I don't like using frozen onions because they don't have as much power as fresh ones and onions are almost always one of the most important things in the pot.

Frozen bell pepper isn't that bad.

Frozen bell pepper and celery doesnt really matter imo

But onions are much better fresh

Definitely be careful about the water content in those frozen veggies if you're going to use those. I think they can ruin a dish. I do what some of the others mentioned for large quantities and start chopping veggies and storing in the fridge several days before using them. I sometimes buy the fresh pre-cut as well. They have to be pretty fresh, though, because they also can build up moisture as the days go by. I can't remember ever using frozen other than the little frozen pearl onions.

that's what i do a couple of weeks before holiday meals... i think i used a little sack of frozen diced onions one time for something.. i was embarassed and humiliated and hid the empty sack in the bottom of the trash can...
