Killed a few doves this weekend and was looking for a way to cook them. Usually just roast them and make them in a rice and gravy but want to try something different!

By far my favorite way to eat them.

You can always grill the breasts with bacon and jalapenos, but you're wasting the rest of the bird...

Cut slits n breast, put sliced jalapeno pepper and cream chease in it, wrap in bacon. Sprinkle some tonys on it, can maranate in dales season if you want also. Throw on grill.. Eat!

I do this a lot: Take your dove breasts and an equal amount of fresh oysters (canned oysters if you live in the mountains) and just deep fry them or skillet fry them all together. (You can roll em in flour or not. I prefer no flour.) Take a Vidalia onion or other sweet onion and chop it up. Mix the chopped onion with mayonnaise and create a dip with this mixture. The fried dove/oyster dipped into the onion/mayonnaise dip is delicious. Salt and pepper as wanted or liked. Quick, easy, and mighty tasty.

I always soak the breasts in buttermilk overnight, cut a jalapeno in half length-wise, place the jalapeno between the breast, wrap in thick cut bacon, then melt a little bit of pepper jack on top of them just before you take them off of the grill.

Brown them up in a stick of butter.
Remove from pot.
Sauté onions and bell peppers.
Add 2 cups of water and a chicken bouillon cube. Let that melt down.
Put doves back in pot. Cover.
Let it cook for about 1 1/2 hrs coverd stirring occasionally.
Add sliced mushrooms if you like.
Thicken up gravy.
Serve over rice
