ain't gonna happen on my watch with a Roux that large, I am sippin a Highball (or 4) when I cook that Roux.........

As far as searching on this site, I never have much luck (but I am technically challenged) and I would hate for the F&D Board to end up having more "Post Police" than actual posters like the other boards on this site. If I never see the word "germans" again it would suit me just fine!!!

Hen is tougher and will stand up to cooking longer, but I know in some areas it will be harder to find, anyway made a gumbo with the leftover turkey and all my Ga hillbilly relatives ate it so this weekend sounds like a good excuse to make another. Yes 4 hi-ball gumbo will work

Huh? You used a pheasant hen - or a cornish game hen? Last I checked, hen was still chicken, or did I missed something during these excessive drinking bouts

And to the author, check the F&DB recipe' thread stickied above. Oh, and Commanders makes great gumbo. Suggest you try their's too.

Hens are the egg producers that when they have outlived thier production are then slaughtered. They are much bigger than the average "fryer" by at least 50%, and will need many hours of simmer to attain the same doneness of a fryer. Are you sure you are from Abbeville?

Don't know if you've searched TD, lately, but the search options have changed and, for lack of a better description, they suck. Can't find much of anything anymore, easily, if at all.

To the OP...for your first shot at gumbo, make chicken and andouille. It's more forgiving than seafood gumbo if you screw up.

If you don't use Tree Dawg's go to the Paul Prudhomme site and start with his. It's a fried chicken gumbo and it's very good. You can figure out your consistencies after you do it the first time, but if you follow the instructions, initially, you'll have a fine outcome. You can adjust to your tastes the next time around.

You are usually the go to person on gumbo is all it meant. The queen bee refers to a friend named Anne Baldridge of Liesure Landing(rented group of mourners wailing) records fame(infamy), and was her nick-name, and is meant with respect.
