Casa Garcia Bean DIp Recipe



Anyone have a Bean Dip recipe similar to this?

I don't have a recipe, but if I remember right, what makes them tasty is some kind of smoky meat flavor. You could try bacon, a lot of it, with some of the drippings, as I have seen that in recipes.

Cook the hell out of the pinto beans, like you do for red beans, using broth or beer with onions, garlic, bell pepper, jalepeno and salt. Maybe a sprinkle of chili powder for a hint of that flavor.

Optional garnishes: green onion, chopped cilantro, jack cheese

Might work.

Wow, what a blast from the past. Casa Garcia was my Friday after work spot more than 20 years ago and the bean dip had a lot to do with it. I haven't thought about the place in more than a decade.

Mrs. Rat and I decided to go there for lunch today to do some research on that bean dip. Will report back later.

ETA: Sorry, no report. About 1/4 of the parking lot was out of commission and there were no open spaces anywhere. We went to Taqueria Jalisco on Williams instead. Only 1 person there could speak english, but it was a good, cheap, home style meal.
