stuffed mushrooms

I'm searching for a good stuffing to go into mushrooms, possibly minus seafood because I don't know if I'll make it to getting that.

Buy some boudin use it to stuff em.

That's not going to happen either....i'd have to go near Laf for boudin and if I won't go down the street for seafood, laf is out of the question.

But i'll try that when I have some boudin on hand...didn't think of that.

I recently stuffed some with John Besh's Crawfish Jalapeno Cornbread Dressing that I had leftover from Christmas dinner. Very good!

My go to stuffed mushroom recipe is one pound of browned sausage mixed with 8 ounces of cream cheese (softened). Simple and everybody loves it!

So here are the three recipes that I decided to try. I'll know how #1 tastes in about 10 minutes.

#2 has great promise because the cream makes the mushrooms soft and tasty. But in my next iteration, there will be no onions (though I used shallots, there will be none of them too)

#3 These are great all on their own, only the mushrooms taste very bland and need something.

I do this and add trinity... then sprinkle shredded parm/regg on the top

i use ground green onion pork sausage from my local grocer. and cook on the pit
