Potato Salad Advice - Gumbo version

My brother wants to serve potato salad with our annual seafood gumbo dinner on Thursday. My version tends to be full of crunchies and other delights. Does anyone have a recipe they use for gumbo-side potato salad? Or a store brand that would work?

Mustard FTW


They have quite a few different varieties at Albertsons that are all pretty tasty IMO.

I saw it brah...

GB, please, please, please dont ruin the frickn tator salad by doing the crunchies. You wouldn't put tomato in your gumbo, why put pickle, celery, onion, bell pepper, pea gravel or rock salt in the tator salad. It makes absolutely no sense... think of the children!

PS: Albertsons or other grocery chains PS sucks. Go to Robies in Abbeville. Old fashion cajun PS

I know, I know! That's why I'm asking for advice. I got the potato, mayo, mustard part down. What else makes it gumbo worthy?

Usually I add chopped green olives, very finely minced onion, and some coarsely chopped bacon (right before serving) to this recipe, but I skip that for gumbo potato salad.

I boil new potatoes and eggs ('bout 1 egg for every 3 new potatoes) with a lil liquid crab boil for some heat. I like leaving the skin on, so I throw 'em into a bowl after they've cooled with the shelled eggs and do a rough smash (I like my potato salad like Clinton likes his women-- a little chunky). Spoon in a lil yellow mustard, slap ya momma and a touch of salt and pepper, then spoon in a little mayo at a time until you get the right consistency.

I often, but not always, use the little reds boiled in 3 or 4 tablespoons of liquid crab boil. Learned this from leftover little reds from crawfish boils.... Dang good

Thats ok, really it is. You can get by without them in PS... But never ever substitute anything crunchy in their place!

Why does everyone hate on crunchies?

There's nothing wrong with a little crunchy..Celery or dill pickles.

Guess this is why I don't like reading the food board all day..it frustrates me.

Gumbo potato salad has NO crunchies in it. That's the point. We don't even use yellow mustard. The yoke and mayo mixed in with seasoned potatoes and eggs. You either play by the rules or you do not. No one said you HAD to.
