Knife Sharpening

What do you Guys use to sharpen your knives? What is your preferred method?

I use stones...but if you don't know how to work a stone then I suggest the Lanskey sharping kit.

A good oiled up india stone is hard to beat. As long as you know what you are doing.

There was a great thread in the last month about knife sharpening, specifically the Lansky (sp) system. I picked one up at Academy..... it does a tremendous job.

I just picked up Dan's EZ-Hone.

It's got four stones from coarse to ultra-fine.
About to try it out right now.

I like Lansky's kit because I can sharpen my knifes while I'm drinking.

I have a diamond/ceramic stone. My best knife (Fallkniven) has a convex edge that does not allow use of a fixed guide like a Lansky.

How's that? Every knife I own has a convex edge and it works fine.

It won't have a convex edge after you grind it in a straight line on a Lansky. Convex edge means it's curved. You can't get that on a straight guide.

I know what convex is. But just about every knife I have is a drop point which is a convex curve in the blade.

The Lansky works like a champ

A drop point and a convex edge are not the same. He's not saying he can't sharpen the knife because of the (curve at the point-drop point). He's saying his knife has a convex edge and not a normal double bevel.

A convex edge doesn't mean a curved blade (drop point). It means the profile of the blade edge is a curve. Like an axe, as mentioned earlier. Like the Taj Mahal, versus the pyramids. It is an edge that is made for rough use.
