1 stick butter
2-3 garlic gloves
1 tbl green onion or parsley
Salt, pepper, cayenne to taste

Blend together in a food processor. Just before grilling the oysters, melt the butter.

Over medium heat, place 1 dozen oysters on the half shell on the grill. After two minutes, spoon (I use a turkey baster) the butter over each oyster. After two more minutes, sprinkle on parmesan cheese. Cook for another minute or two until the butter is sizzling and the edge of the oyster curls. Don't overcook.

Add pepper sauce to taste in the butter mixture though.

Melt some real butter. Add a TON of chopped garlic and some Old Bay Seasoning.

Top the oysters with that mix on the grill...occasionally dripping the butter into the fire to get it to flame up.

Top with a little lemon juice.

Then top with shredded Parm/Reg or Pecorino Romano
cheese...and no...not the crap in the green can. Get GOOD cheese...which will run $18 a lb...but it's worth it!

Grill until the cheese is melted.

Good idea to have a really long spoon or mitt for this.

If you happen to not have shells, we have done them in the little foil baking cups also and they came out very good.

We've done this too. Not as good as the shells, but definitely a good substitute.

Muffin tins work in a pinch as well.
