So I have a bunch of crawfish left over from a crawfish boil yesterday and I decided I should attempt to make a crawfish bisque tomorrow. I've never made it before, but figure now is as good of a time as any to learn how to make it. I'm looking for some authentic recipes, so I figured I would try on here to see if any of you had any you would like to share. Thanks.

Do a search. There was a bisque thread just last week.

If I ever make bisque again, I will not stuff the heads. I will just make boulettes instead.

Not as traditional, but easier to make, easier to eat.
