Turkey carcass recipes

I need to make something with the rest of this turkey.

Any ideas?

that's what we did, then pulled the rest of the meat off and made turkey and sausage gumbo... came out great.

I baked 6 turkeys the last couple of weeks and while I sliced them up I brought out my big stock pot and tossed two in it, added water and all the wilted vegetables I had including celery, carrots, garlic and onions - whole no need to peel- and cooked down for several hours adding another carcus as it came out of the oven and was sliced. Cooked for probably six hours. Little salt but the seasoning from the baked carcass was most all needed. Strained all the stock good, tossed everything else and refrigerated. Next morning skimmed fat from my 3 gallons of demiglace and heated lightly just until melted and poured into ice trays. Froze overnight then put into ziploc bag.

Now I have a two gallon ziploc filled with about 120 nice individual frozen intense turkey stock. Made with something that would have been tossed along with the wilted vegetables.

Good stuff and easy way to do it provided you are going to be home for awhile.

another great choice is a Turkey Salad (just like Tuna or Chicken salad) for sammiches........

I did them for church and kept most of the dark meat and while boiling the stock I boiled some eggs and made a big turkey salad as well. Good stuff.

Hell the stock cost me the water and what the hell I was in the kitchen most of the day. Cocktail, turkey in the oven, turkey stock on the stove and Anthony Bourdain on the TV. Fine day.

I got up early yesterday morning and put mine on for stock (pretty much the way Martini described it.)

Then I made turkey and sausage gumbo with it last night.

One of the best I've ever made, if I do say so my damned self.
