my most recent 
adventure involved me bringing a small snake sharmer(short crack barrel 410) a bunch of beer and ammo and paddling out into my cousins lake and shooting carp
so. much. fun.
probably killed a dozen and had 3 or 4 double kills
anyone know if this is actually legal in texas? if so i'll gopro next time and post film

it was definitely a blast, pun intended
after i ran out of ammo i decided i wanted to see if i could foul hook one so casted into a group with a topwater about 25 yards away that was schooling on top and foul hooked one in it's eye socket
so then i put the rod in the rod holder, cracked another beer open and just let it pull me around for 20 minutes, those carp get BIG

I fly fish all the time out of my kayak and while you can try it out of any kayak, it's much better to get one that is better suited for that job.
Jackson Cruise, Native Ultimate, Native Slayer, Old Town Predator MX, Hobie Pro Angler, Diablo Adios, Jackson Superfishal, KC kayak. . . all these make great fly fishing boats. What you are wanting is a wide open cockpit without a lot of snaggable things that your line will inevitably migrate to. And the ability to stand and cast is preferable as well. (You can cast sitting down, but its easier if standing)
As far as the whole Boat vs. Kayak argument. . . of course the boat will be "better". It's more stable, has the ability to travel a lot further, the higher vantage point is better for sight fishing and you have a motor so you aren't working so hard! But those features also cost more money. . . initial expense, fuel, maintenance- it can all be cost prohibitive to a lot of people that still enjoy getting out on the water and fishing.
Its all relative though. . . alot of people start out with the cheap Pelican kayaks from Academy that tend to be uncomfortable and not very stable and then want to assume that all kayaks are like that. If I have a choice between fishing from that or a boat- even a 14' flat bottom- I'm choosing the boat every single time!
Get a Hobie Pro Angler though, and give me the choice and it becomes a little more difficult to make. I can get to places in my PA that you can't in a boat, and sometimes the fishing is on fire in those shallow ponds, but if fishing is slow, being in a boat and able to cover more ground is more beneficial. Not to mention the ability to hits\ rigs and deeper water. . .

A lot of alcohol was involved
The wind caught my line in my lap as I was trying to "shoot" the line a long way and it caught it right behind my ear and plopped them in the water. No croakies

Here's another + on the kayak side:
My personal best red from a kayak- 42" taken on a ML St. Croix paired with a 2500 Sahara with 10lb braid. . . obviously I wasn't trying to target bulls this trip!
Bull pulled me all over Lake Palourde near Grand Isle and many times during the fight I thought I was going to lose her. I think it took about 15 minutes to work her alongside the kayak.
Now sure, you can catch a big red in a boat, but you're not going to have that same experience you get when you're in a kayak. . . it's a whole different world!
