What are some outdoor style themes and lessons for a summer camp?

Running a summer camp that is only during the day in the city. No guns, shooting, or camping. I am going to teach the kids how to fish (cast, tie knots, catch and release safely, etc).

Looking for other ideas that I can teach elementary aged kids during a day camp in the city. I know there aren't a whole lot of options given these circumstances, but I am sure there are some quality ideas and lessons to be taught.

You could bring your calls up there, be nice if you could get some recordings they could mimic. Duck and turkey would be fun.

Scavenger hunt.

Capture the flag, or predator, with tagging.

You could set up a ninja warrior course.

Bring them to the local park with cameras, and teach them about photography, different plants, trees and animals.

you could still do basic camping skills for a day camp.

How to make a camp fire - cook over coals, dutch oven
Basic knots.
How to set up a tent - old school pup tent style with guylines. Or to make one out of a tarp and rope

I like the gardening skills idea

Casting in a bucket or tire.
No need to have cameras for teaching photography, the kids probly will have their cell phones and have already taken thousands of "pics".

Call nico to be a guest speaker and bring samples. The kids will want to eat a bite, then go to sleep.

I agree with container gardening or building a raised bed garden.
Also, basic first aid!! This has become a lost art. It is amazing how many kids cannot treat a wound. By treat, I mean good enough until professional treatment is available.
