Cut skip jack is the answer for big river cats.

And if you can get some skip jack in the 8-10 inch range just slice thinly to allow the oils to release and use whole. Fish the deepest bottom you can find or the deepest still water if available.

There were people fishing on that big steel pier by the USS Kidd a few months back. Didn't say on the pier that you couldn't.

Cirlce hooks are great for jugs and trotlines because you dont have to set the hook, the fish catches itself. I used circle hooks with rod and reel before and tended to lose some fish I felt I could have caught with regular J hooks
As far as bait, skipjack or ladyfish or shad/pogies work great for blue cats. Shrimp is also very good for blues. Ops prefer live bait, so a live bream is one of the best baits.
If you can find a grain elevator, fish south of it. Have caught some giant blue cats right off the bank south of a grain elevator. The fish were full of corn

I fish on the TN river and catch plenty of good cats. Use big chunks of cut skipjack for bait. I use 3-12 oz of weight depending on flow. I prefer mono to braid and spool up with 30-40 lb big game and an 85 lb leader. I use the sinker slides and basically do a carolina rig. Ugly stik tiger rods in heavy with shimano trg 200 reels have been great. I have landed fish to 85 lbs with that set up. Look for holes and humps in the main river channel or where creek channels join the river channel.

Man it's pretty hard not to catch catfish in the MS. Greasy chicken should make for good bait
That Jeremy feller on River Monsters uses regular old bath soap for bait.

We definitely have a different definition of "Monstercatfish" that the OP was asking about. Those are some fine eating fish you have there though.
Targeting fish specifically in the 50lbs+ range is a very different game. I have been trying to catch a MS record of and on for a while and have landed a few very nice blues.
But to be clear this is what I assumed the op was talking about, blue-catfish

I'd say that one caught in venison was a monster.
