Possibly a Chicago or ole hickory

The cardboard cover says its for meat packing.

+1 on Dexter for regular filet knife.

Anyone that says anything other than a Black and Decker electric for best electric knife hasn't been cleaning fish long enough to know what the best knife ever made was. I still watch ebay for them to come up for sale. They were the bomb.

Victorinox 6" boning flex knife is a great one. I got it from Hilton's restaurant supply. I have never seen a knife so sharp. I run bets and clean catfish every weekend and have cleaned thousands of fish and barely even sharpened. Only $20!
