This is what I'm saying. I have about $1,000 invested in a grinder, stuffer, smoker, and vacuum sealer. I make sausage from about 4 deer per year for myself, grind up another one or two for ground meat, and usually let a few folks borrow my stuff to do their own. Buy nice stuff and it will pay for itself in no time. The only thing about making your own is finding the time to do it. It takes me about 12-16 beers to do mine (I usually make sausage from 2 deer at a time), starting in the morning and taking the last of it off the smoker around 10-11pm.

My grinder also makes sausage. I guy the tubing at a local butches shop in bulk. Now that shite went way up.

Good catch, I usually pay around 150-175. But I get some pork in my ground, make a good bit of sausage, both smoked and green, and get it vac packed.

I think they do a good job and see similar prices all around the prairie meat markets I use.

We are actually cheaper than the 5 processors closest to us. All our items come vacuum packaged and labeled similar to what you would get if you bought smoked sausage from the grocery store. What some people fail to realize is the added cost to making sausage...seasoning, casing, vacuum bags, wear and tear on equipment.

Please tell me why people are paying $2.99 a lb for pork?

I use Boston bunt roast and pay an avg of $1.69 a lb.

Yep, and that is retail. If you look around you can find it as cheap as .99...

When they hit that price, I buy a few for the freezer. That and when I kill a wild pig, I save some for deer sausage.

Local store sells packs of season to treat 25lbs of meat for $3.

Yep, I spent a summer working in a meat market. I learned so much that summer than helped me later in life. Cutting meat is not rocket science, especially if you have the right equipment...

Made my own sausage for the first time last year. Wasn't difficult, just a little messy.

-$25 for natural casing (enough for 100 lbs)
-<$50 bucks for a few boston butts (I make my sausage lean)
-$15 for seasonings.

You can EASILY make sausage out of a few deer with that for WAY under $300

A bet a rental shop could make money renting deer grinders, vacuum sealers, etc and selling supplies...

I am not trying to get into a Pissing match on how much it cost to make sausage. I know lots of people that make their own, and I think that's great. But I also know the cost involved in running the business. It takes a lot of product to replace a commercial vacuum packer, a commercial grinder, stuffer, etc when they break. I think the biggest draw to a processor is the quality of the product and the convenience factor. Have a great day and good luck guys.

Holy moly! That is expensive for pork!
Also, do all of you put that much pork in your deer sausage? We have always done 80/20 deer to pork just for the fat since deer is so lean.
