Good friend of mine cooked this and sent me the recipe. Made it last night. Best Speckled trout dish i've ever had.

Cooked Risotto
Crawfish/crab sauce-butter,onion /garlic and one cup of whole milk.
Peeled crawfish tails,Lump Pontchartrain crab meat

let simmer for a few minutes

thicken with corn starch and add in some Tony's or Slap ya mama

cooked trout filets in pan with some olive oil(I lightly battered mine with plain flour)

Make bed of Rositto, put trout on top and cover with crawfish/ lump crab meat sauce.

Enjoy.

There are no trout in my area and I don't recall that I have ever eaten trout strangely enough. How different is it from bass. Do you think it would be good with some LM instead of trout?

That looks great. Idk about it being on risotto though. Seems like it would be too mushy.

Trout have a milder flavor than bass in my opinion.

Looks good but needs some color and some texture.

This with bass or catfish will work. The flavor is in the crawfish crab sauce.

Looks good.

that was a pic from my buddy's dinner. Mine last night was a little different and had more color and the crab meat gave it more texture.

I added the crab meat to his recipe. Also did some twice baked seafood potatoes with the crab meat and crawfish.

That looks great. I would prolly make a roux to start, doh...

Miz C has made something similar with shrimp and o, bp and c and fried catfish over wild rice.

peel crawfish tails, throw in some lump crab meat and mix with butter, onion, garlic and about one cup of whole milk. Let that mixture simmer together for about 10 minutes then mix in corn starch till it gets to the proper thickness.
