I think he's referring to blood being under the skin.
Some wont eat those due to superstition. There's no logic behind it though, it's just blood from being shot.

Whistling ducks are great, but gotta skin em. After that I like teal. Woodies, widgeon. In no particular order, depends on the batch you get. Mallards can be good or terrible.
