Nope, but QueenRanch wants me to smoke a speck for Christmas. Who wants to make a trade. I've got elk, axis, whitetail, mangroves, trout, and reds.

Knowing what I know now, I would cook it an oil-less fryer.

Inject, rub it on the outside, commence cooking.

A few years ago my grandpa was in the hospital for thanksgiving. My dad cooked one in oil and I cooked one oil less. We put one breast of each on the platter. When we got to the hospital no one could tell the difference. It takes a good bit longer but you don't have to worry about oil temp or frick with oil.

Definitely the way to go. There is no disadvantage to oil less that I could see.

We smoked 13 specks for a party the day before duck season kicked off and man, they are fantastic that way!

The Old man got a nice new fancy turkey fryer for this years thanksgiving. I put it on the list to try a couple of whole fried pintails or mallards. I can't imagine it could be anything less than good with crispy fried skin.

What you need to do is put a little of each in a box........take it to the UPS store.......have it packed in dry ice and overnight to my location.

TIA.

Depends on size. For turkeys, it s 10 minutes a pound on high.

I was a dedicated peanut oil fryer for a good many years. I had my concerns about oil-less, but man, it turned out great.

Don't forget to put wood in the wood box.

Most probably fruit wood with duck I'd imagine.

Never fried but smoke most of my ducks. I stuff the cavity with garlic, onions, and 60/40 deer sausage. Smoked slow and low with hickory. Makes my mouth water thinking about it

Speck season is in for another week. Found that out after I text you. I would assume I'll be able to come through. Transportation going to be the biggest issue.
