I've noticed if you put over 3 the online booking will often exclude rooms with a single king bed. We've got two younger kids who like to sleep on the pullout sofa when available so depends on what type of rooms are offered and what I'm looking for as to how many I plug in.

I've never once entered a quantity of people that will be in the room for any hotel.

It is not for daily rate. They may want an accurate head count of adults/kids for continental breakfast or something of that nature

One reason is in case of fire or need to evacuate, they want to know how many folks are in each room.

The only time this was important was in Oslo. I marked one out of habit for work booking, but my wife came along. When we checked in, they requested her passport info and added a $20-25 per night charge.

I always just put 1, even if I'm bringing my family of 4.

If you are able to recognize your baby by its unique facial and other features, I don't think you need to use any kind of identifying marks.

When you go over 2, they can charge you an extra fee at many hotels.

They can, but in practice, it rarely happens. You're correct though - most room rates are for double occupancy.
