Maybe if I go pour BBQ sauce or something on the body to entice a dog to drag it off for me...

Ask your neighbors if they're missing a cat. Unlike dogs, cats are territorial and do not wander far from home. Chances are, a home is in distress because they can't find their cat.
If that fails, just dig a hole in your yard and bury it.

Then again, if I wait until night, I suddenly look like the sketchy nneighbor playing with a shovel and dead cat.
You could put it in a shoebox or a plastic bag before you bury it.

This. Neighborhood stray died a few years ago in my yard. Buried it in my garden. Completely forgot about it until I read this. No harm, no foul.

I'm sure you already are the sketchy neighbor so cover of darkness doesn't really help.
