What are some non touristy must do's in NYC

Going to the big Apple for four days Halloween weekend I have been 2 times before I've already seen most of the real popular tourist traps, but this time I'm looking for something different any recommendations would be greatly appreciated.

Well if you've done a lot of the touristy stuff already, go do something you haven't done yet.

When I worked the area my favorite things to do were people watching and feeding hobos.

There's 2 waterfalls in the north woods of central park.
The tram to Roosevelt Island.
Astoria in queens has some great beer gardens and greek food.
Flushing Meadows/Corona Park is nearby, and you can see the World's Fair globe.
Sylvia's in Harlem for Sunday gospel brunch.
Dino BBQ in brooklyn then head to the plethora of bars in that area.
The tram to Roosevelt Island.

Grand Central Station has an oyster bar in the basement, which is cool.

Just don't stop dead in the middle of the sidewalk looking at a map lost as frick and i won't have to RKO you on my way to work.
Seriously though, check out the best restaurants on Yelp/Zagat and try some foods that aren't readily available where you live. So many good restaurants in NYC. Would also recommend going to a comedy club, the best ones are Gotham and the Comedy Cellar.

I wouldn't think about it so much in terms of "do's and don'ts." If I were you, I would select an area that you have yet to explore, and just go get lost.

I did this in the opposite direction. I looked up interesting places to see on foot while my wife was in a conference. Really good way to fill up a day.

Pizza at Grimaldi's, then walk down to jacque Torres and get a hot chocolate to walk across the Brooklyn bridge. It is a bit touristy, but one of my favorite things to do when I lived there.
My favorite place was A Cafe on the UWS on Columbus. I lived right around there and went often. Tiny dive French Caribbean place that was excellent.
Dino BBQ was good, but I probably wouldn't go there if I only had a few meals in NY. And it is a chain place. One in Brooklyn, Harlem, Newark, Rochester, Chicago...
