We did Friday through Monday split between Vail and Denver, in September.

Fly up to Seattle. Lots to do up there. You can do the mountains, sea, spa, maybe baseball game.

Not sure when you are looking but Jackson Hole is great in the spring.

I'm leaning toward possibly Portland....wife loves waterfalls, and we could hit up some of the Oregon wineries as well.
Seattle is another option, I've been several times, but she never has.

Devils Thumb Ranch, Tabernash. Colorado. The ranch's backyard is the continental divide.
Rocky Mountain National Park, breweries, Denver, drive/hike up some 14k foot mountains.
Flights into and out of Denver are usually reasonable.
