Smoked or fresh sausage.

As an off-shoot of another thread. I hunt with some good friends in Vermilion Parish. They love green(fresh) sausage and dislike heavy smoked sausage. Do not use tasso either. What is your opinion.

Depends on the dish.

Sausage and White Beans has to go fresh.

Gumbo....OK with smoked and tasso.

Sausage on the grill for like an app at a BBQ....fresh obviously.

I like fresh sausage grilled or used to make an onion gravy, smoked any other way.

Once cooked not much different imo. Fresh sausage takes a hell of a lot longer to cook though.

No doubt about it ... smoked. I'm originally from Evangeline Parish and live in Vermilion now. Have never cooked nor will I cook fresh sausage (ick). Lucky for me my husband (VP native) likes "Ville Platte" sausage (Teet's .. is there any other??)

GUMBO= FRESH AND SMOKED
GRILL= SMOKED FOR PO BOYS
BEANS AND RICE= SMOKED
SAUSAGE RICE AND GRAVY= FRESH
CHOPPED UP AS APPETIZERS WITH BBQ SAUCE= SMOKED
