Most of the ones I've met have some serious hate for men, yet they try to emulate us.
I do know a really cool girl though. You can drink, watch sports, and make crude jokes together. She's the lone exception to my above observation.

My wife and I know several lesbian couples that are as normal as can be. They are a lot of fun to be around and well established in careers.
On the other hand - I know others that are as nutty and dishonest as anybody I have ever known. I guess they come in all types just like everybody else.

The ones that really get me are the normal ones that date super butch masculine chicks that dress like men, have male haircuts, etc. Like do they really just love tits and vag, because everything else about the relationship is normal.

I've met and know well several who do not have daddy issues, have normal social skills, and aren't weird at all.
Not to say your anecdotal experiences aren't legit but I've met more normal ones than not. That being said, I don't know many.
ETA: In my experience, gay men are wayyyy weirder and abnormal. Like, by a lot.
