I stuggle w keeping my head down through my swing

Creating lag vs casting from the top. All my shots are high and short.

For me, it's remaining concious while looking at golf threads.

My drives. I'm personally satisfied fundamentally almost everywhere else. I've always been meh off the tee. I'll hit it straight for 6 holes and then i'll rough it for the next 6.
Amen brotha
*** I did hit a 315 yd drive on Saturday though

The baseball swing is exactly the same thing but on a diagonal instead of horizontal plane(go look at swings from each on YouTube). You want to come from the inside, and let centripetal force and momentum carry your swing out and down. That hitting down on the ball is a bullshite swing thought that screws up more swings than it fixes. Like I said in the OP about distance to ball, I think if you got that down you'd be good to go.
Listen to this! I played ball in college and had an inside/out swing... I started playing golf about 10-12yrs ago with some guys who I thought knew what they were doing and told me I needed to start hitting down on the ball. Now I play with guys who actually know how to play (played in college) and I get beat like a red headed step child b/c I've been doing it wrong this whole time! I'm much better now that I figured out what I used to do was correct and I hit my irons and driver as far if not further than those guys. It's hard to get the inside out back... Very hard.
In baseball terms... Hit it to right field and stay on the ball. Don't try to kill it and let the clubs do the work. It'll come...

This. I thought that trying to focus on keeping my hands in front and "hitting down on the ball" would fix this, but according to the OP, that is a bullshat swing thought.
So, fack it. I'll just grab a longer club and flop it up there.

getting my hips rotated around on the ball. I feel like I should drive it a lot better than I do but my swing is all arms.
Other than that shot consistency and distance consistency

I overswing and get steep on the downswing. Slight plane change. I can't stand looking at my swing on video unless I start it at the top.

My 80 yards in game is just awful right now.
So much this. If I have to pull my 56 degree out in the fairway its chaos, I need to improve there ASAP.

biggest thing I'm struggling with right now is mid to long iron and hitting behind the ball too much (i guess hitting it fat)
not sure if im standing too close or what? Any suggestions?

The two things I wish I was taught when I started playing that I have since learned:
The hands need to beat the club head to the ball on every shot (lag) and the right elbow needs to rotate externally so that the arms and shoulders stay connected.
Agree with the other guys... It's not "hitting down" on the ball, it's staying down through impact... Maintaining spine angle. If your hands are ahead of the club head, and you maintain spine angle, the down and through impact will take care of itself.

They're called long irons for a reason. They're longer. That's why you hit them fat and not your wedges. Choke down, stand taller, or further away. Grab a bucket of balls and find what works for you.

Even with full swing or is it mainly happening when you half or 3/4 swing?

Without looking I'd say you're too close. Sounds like what I am doing, which also happens to be long irons.

Weight shift, weight shift, weight shift. 80% of my bad shots from reverse weight shift and not following through with body turn
