There are FIVE categories for whites and ONE for blacks. So, no, I'm not surprised at all.

Which is why I was surprised at the low British representation. My ancestors were British and I expected a similar theme here?

Blacks comprise 40% of Louisiana yet they are ALL lumped into ONE category. The 55% of whitesin Louisiana are dispersed into about FIVE ethnicities (English, German, Italian, French etc.)

Majority means most in absolute terms. If six factions total a grouping of 100 guys, and my faction has 51 of those guys, we have a majority.
Plurality simply means most in relative terms (more than any other single faction concerned). If of the 100 guys I have 39, one faction has 21, one has 15, one has 10, one has 8, and one has 7, I have a plurality, but not a majority.

That approach is kind of skewed and unfair when trying to put together a map showing our country's ancestral history? Its crap.

Negative. Hawaii, California, and New Mexico would have other than European pluralities.

I remember I was a bit surprised to learn how big the German immigration to America was.
The Irish immigration, like later ones (Italian, Jewish, Puerto Rican) got the publicity b/c it was so huge in NYC. But the Germans had the national numbers.
In Alistair Cooke's classic book America (1972) he points out that we think of the US as being mostly English-descended, but outside the South it's no more than one of four people.

I was arguing with a person much smarter than me and they were claiming the prominence of German immigration here. I couldn't believe it when I looked it up. So inside the south there's a higher % of English ancestory? Have you read actually that book and is it worth reading?
