Yeah I think any big cat can use their paws/claws as a weapon. Dogs don't do that.
The cougar would end the pit bull with just a swipe or two.
Not to mention the cougar is probably double the size of a pit.

A big cat is like any predator, they want to get a meal with the least energy expenditure. They've attacked small dogs, but they generally don't frick with big dogs. They're not looking for a fight, they're looking for easy prey.

Hyenas, while neither cat nor dog, are actually more closely related to felines than canines.
Now, to answer your question.
If the hyena gets a bite, it's over. They have a crazy strong bite.
But I think a fully grown western cougar slits him open.
