Can you acquire chrones? I don't think I'm spelling it right
Allergies? Gluten?
Maybe since its food related you should see a nutritionist

99% chance it's not gallstones. I had my gallbladder removed about 2 yrs ago. My symptoms which were normal were:
First time I was awakened by a intense pain in the middle of my check really early in the morning; like a fence post was sticking in me. The location AND time of the pain were classic symptoms.
Went to the ER and the ultrasound found 8MM gallstone in the neck of my gallbladder.
A couple of months later I had the same thing happen again but once I threw up everything was OK; I had my gallbladder removed 2 weeks later.

That's why I said 99% but the only way to know FOR SURE is an ultrasound.
IF it is, have the surgery. No lasting effects on what you can or can't eat.

The foods that trigger my symptoms are classic gallstone attack triggers. It feels like someone is shoving a Samurai sword into my stomach. I have a high pain tolerance and its incapacitating me at points.

We have few kids at school with the same symptoms when they get off their mandated diet. Some are allergic to gluten (yes it's real; I was sure it wasn't at first), some other things.
Late in life and serious allergies are more common than you think.

I'm not doubting any of that.
However, I have had attacks from gluten, non-gluten, dairy, non-dairy, meat, non-meat, etc.
I seriously would be allergic to everything but small amounts of raw fish. That, so far, is the only thing not causing violent pain in my abdomen. And I have really tried a ton of different stuff to try and feel better.
Also, I take benadryl to sleep at night often and it does nothing to help symptoms of this.

I have seen a kid who ate seafood his whole life swell up and need an epipen after one fish sammich.
The same thing happened to my brother with wasp stings, at 26
I wasn't allergic to anything until my 30s. Now I can't be around certain flowers. Boo for getting old.

Had my gallbladder removed in 2007. Felt like someone was sitting on my stomach when the gallstones would move after eating fatting foods. Ask for an ultrasound. That's how doctors knew I had gallstones & needed my gallbladder removed. Surgery was not bad (have 4 small scars on my stomach). Was back at work in a week.

I love a good scar, as long as it isn't on my face or something huge like a spinal surgery.

I have a scar below my belly button where the camera was & 3 small scars where they pulled it out on the right side of my stomach.

wife had hers removed...she felt like shite with stomach issues and some throwing up for awhile...then one night after eating some greasy food for dinner......she sat straight up in the bed screaming in pain and clutching her side at about 3 am....it was an "attack"...when a stone moves into the area that ties the gall bladder to the liver and basically blocks it...she had surgery the next day...
she has to watch what she eats now...the gall bladder provides extra juice or whatever to break down greasy fatty foods...pizza, hot dogs, bbq....things of that nature she can only do in very small portions because without the gb....there is no reserve tank to break down those fats...

Well screw this.
I haven't heard about this. Can they just go in and get rid of the stones and leave the gallbladder?
