I've seen nearly everyone I ever wanted to see. But despite living in Texas in the early-mid 80's, I never saw SRV. So that would have to be the one.

Between the screaming girls and the Beatles stopping their show in the middle of a song when their contracted time ended I'm not sure the Beatles were all that great a concert. It would be historically interesting to watch but I wouldn't expect all that great a show.
