David Lindley plays pretty much anything with strings.

Lenny Kravitz
He's a subpar guitar player, though.

James Brown was appearing on Johnny Carson, during the pre-show rehearsal he played every instrument in the orchestra.

Buckethead. He is probably a top 5 guitar player alive, and can shred on a bass. Although obviously lesser known than his guitar work, he can also play keyboards, ukulele, organ, violin, clarinet, saxophone, recorder, drums, gong, and piano.

Paul McCartney is an obvious one, maybe the definitive one.
Criminally underrated.
Others - John Fogerty, Trent Reznor, John Paul Jones, Levon Helm, Steven Winwood

You listen to Rundgren's Something/Anything? Mind-blowing, the virtuosity he displayed, the studio manipulation, the multi-tracked vocals. 3 of 4 sides all sounds attributed to him, this dude has been so overlooked when it comes to brilliant, possibly legendary multi-instrumentalists. Plus he's just a real chill, accessible dude who cranks it out to this day.
Not to mention the great albums from the era he produced, staggering. Runt's a total musical force.
