Because she doesn't know that it's only "local." She is assuming that they are looking for her and "if they are thorough," they will be monitoring/contacting dentists--all of them.

That episode had me so wound up.
Even though I knew they weren't going to catch Elizabeth, that was tense as shite.
I love the "old school" spycraft. No satellites, facial recognition software, drones, etc. Just down and dirty human intelligence.
