He says that there is only do or do not. I thought only siths live in absolutes?

The Light Side deals with absolutes too. A triggered Lucas just threw that line in there to be political because GWB said "You're either with us, or you're against us" when talking about Iraq.

Do or do not isn't an absolute because there is more than one option.

The Jedi deal in absolutes fairly often. Attachments are bad. Emotion is bad. Fear is bad. Their philosophy is problematic to say the least and leads to many bad outcomes.

I am more concerned about how the Sith are always kicking the Jedi's arse. Watch Clone Wars... Sith/Apprentice always win or get away when facing multiple Jedi. One Sith Lord was single handedly responsible for the destruction of thousands of Jedi. Hell, most of the bounty hunters on the show kick their asses. Case in point Cad Bane. Faces Obi Wan and that Voss guy and battles them to stalemate then escapes. The Jedi are weak.
