My wife had the same response last week. She just finished Empire and she really liked it. She's back on board for VI. In their defense, New Hope looks pretty rough these days. The HD remaster doesn't do it any favors.

I've never watched an entire Star Wars movie, tried once and was bored so turned it off. No reason to go back, just not my preference of movie.
