When I was about 6, my dad put me on his spoilers and I handed George Strait a piece of paper with "Milk Cow Blues" wrote on it mid concert. I yelled "hey will you play this song?" He said "yeah, buddy," and shook my hand.

Mine would pretty much all be sports celebrities/personalities. I know most on this have been movie stars, but this is the TV board too! 
Most memorable:
Herby - has at least 2 bodyguards with him on game days. One was inside the TV booth and one outside the door. Held the door open for him when he walked in and he didn't say thank you so he's a dick.
Craig James - Didn't wash his hands in the bathroom. Rode an elevator down with he, Jesse Palmer, and Rece Davis. Made James laugh. Not sure how I feel about bringing that man joy.
Matt Millen - Very nice guy. Talked my ear off on the elevator my first day working.
Holly Rowe - One of the nicest people I've ever talked to. Sat by her during a basketball game. Great sense of humor and really smart.

The biggest celebs outside of sports I have met are
Bill Clinton when he was Governor of Arkansas
John Goodman when he came back for Homecoming at SMS
Brad Pitt when he came back for a SMS game
In sports I dont know where to begin since worked with Coach Alford and worked with NFL guys.
ETA:
Emmitt was the biggest arse to work with and Aikman and Irvin were pretty easy, during the Super Bowl year v. Steelers as I worked a week of training camp
