If so, what does the career path look like for an underwriter? I'm a finance major but I hate my corporate finance classes. Love my two insurance classes and also like the risk management class.

I work in the insurance industry, but on the sales/agency side. I can tell you little about underwriting career.
However, I work with several, and here are some observations:
Number crunching
Behind a computer at nearly all times
80% are weird in a social setting

Good upward mobility at all?

I haven't a clue, but I strongly presume so.

They have their hierarchy like any other job. Entry-level, senior, management, etc. I'd definitely go with a larger company though.
Id be cautious because companies are trying to make more automated underwriting and laying off.
Also, you'd likely sit in a cubicle for 40 hours a week and listen to the sales force bitch most of that time.

Life underwriting is trending toward working remotely from home. Been that way for the last decade or so.

Depends on how good you are with data.
I knew a few underwriters who felt bored by their jobs and segued into analytics (quants) in finance and made bank.
They were in very good with risk and more importantly, explaining risk to managers who weren't too sharp.

yup. some underwriters just sit around and input data into a computer without really knowing whats going on.
i'm a professional liability broker and many underwriting managers i work with are licensed attorneys.

Look into Zurich. The do a great job at hiring directly from college and training. There is a ton of upwards mobility with Zurich or even some of their competitors. There is a wide variety of underwriters out there so find something that you're interested in. For me, I was working in insurance as an adjuster so I was exposed to a small piece of the industry. I was always into aviation so I started looking into moving into Aviation Underwriter jobs but ultimately decided to go into sales.
There are underwriters out there that specialize in athletes and sports, if you have any interest in that.
Good luck. Find job fairs that deal with Insurance and go talk to the recruiting people. They will obviously try to sell you on their organization but will typically give you a pretty good insight of the job.
