Patrick Peterson never played a snap on offense for LSU, Coach Miles said that one of his biggest regrets was NOT using Patrick Peterson on offense.

Michael Clayton or another receiver played a little Safety or so I seem to recall. But again, this was VERY limited also and maybe just the last game or in the bowl game.
The one player I can think of that got decent snaps at both, didn't get those snaps concurrently. Corey Webster was a WR, and saw decent amount of snaps for a freshman, and then moved to CB before his sophomore year.
